GOAN SAUSAGES JOURNAL
If you've typed "best sausages in Goa" into Google, you've probably noticed most results are either generic restaurant round-ups or pages that don't actually explain what makes one sausage better than another. So here's an honest answer, from a family that's been making Goan sausage — chorizo — in Fatorda, Margao, for generations.
What actually makes a sausage "the best" in Goa
Goan sausage isn't judged the way other sausages are. There are a few things locals and regular buyers look for every time:
The vinegar has to be right. Proper Goan chorizo uses toddy vinegar — fermented coconut palm vinegar — not synthetic white vinegar. Toddy vinegar is what gives Goan sausage its distinct tang, and it's also the single easiest shortcut for a seller to cut. If a sausage tastes flat or just sour instead of tangy, that's usually why.
It has to be smoked, not just dried. A lot of mass-produced sausage skips the slow wood-smoking process and relies on quick drying instead. You can tell the difference in color (a deep reddish-brown versus a pale, uneven look), in texture (firm versus mushy), and in how long it actually keeps.
The meat-to-fat ratio matters more than people think. Too lean and the sausage turns dry and crumbly when cooked. Too fatty and it falls apart. Good Goan sausage holds its shape and stays juicy.
And finally — freshness. Sausage that's been sitting around loses its character fast. The best sausage in Goa is the sausage made closest to when you're going to eat it, not the batch that's been on a shelf for weeks.
Why people keep coming back to Pork And More
We've been making sausage this way since our granny, Eliza E. Crasto, started the business — toddy vinegar, slow wood smoke, no shortcuts. That's not a tagline, it's just the only way we've ever made it. We're currently rated 4.8 stars from 41 reviews on Google, and here's what customers actually say:
