Ask around Goa Velha and you'll hear about makers who've spent decades perfecting a single traditional recipe — sausages cured in homemade toddy vinegar and smoked over a wood fire for days, by families who've done it since before it was a business. These are worth seeking out if you want to taste sausage-making the way it was done a generation or two ago, though most of these operations are small, informal, and don't always have listed contact details — you're often going by word of mouth and a general location.
